1 tsp  Fennel Seeds , optional
1 tsp  Dried Fenugreek Leaves , optional

225 g  Tomatoes , diced
Canned Coconut Milk
Red Bell Peppers
Cauliflower Heads , sliced into 1 inch pieces, or small florets
Zucchini , cut into 1 inch thick half-moons (or quarters)
Lemon Juice
Cilantro , for garnish
400 g  Chickpeas , from a can, drained & rinsed (optional)
